Traditional flavor is to be expected from home made desserts. Desserts belonging to an ancient paistry style, different from one season to anothe, being clean and with a nice taste, full of care and attention; as opposite to practical and branded industrial food products.

“ Scaratielli, Cannoli, Chiacchiere, Pastorelle, Struffoli! For each kind of desserts there are different ingredients depending on the recipes given in each different local village. Each family in Cilento often keeps “ the secret “ about how to make an excellent dessert or cream. The Lab will introduce, depending on the season, one of the traditional desserts – thus – guiding each member from the start of the making process until the final steps of cream stuffing or cake decoration /design.

The production tehcniques of goat’s cacioricotta cheese, a Slow Food heritage food, stay inchanged throughout centuries and award Cacioricotta cheese as one of the oldest main local hand made food productsfrom Cilento area and from South Italy. This Lab Activity will teach you all the useful know-how applied in the making process of this delicious type of quality cheese.

At La Petrosa the Caprine and Goats experience is all about goats. Adults and children get a close opportunity to meet these friendly animals, to learn how to take care of them and how to milk them and also take them for a nice walk from the farms to the hills; then, in the CacioricottaLab visitor get the chance to learn how to make goats’ cheese and even taste the freshly made cheese!

At I Moresani Farmhouse, the CacioricottaLab is mainly based on the cheese production process: the cooking, the cheese curd and its breaking and its collection. Of course, visitors must not miss the final cheese tasting session!
